What’s for Breakfast: Peanut Butter ‘N’ Banana Pancakes

If any of you know me well, you know that I LOVE this little combo.

Or if you just know what’s good in life, you should know that the combination of peanut butter and banana is simply perfect.  By itself… on toast… in oatmeal… and my discovery this morning, in PANCAKES!  You heard it right, Peanut Butter ‘N’ Banana Pancakes!  Sounds amazing, right?  Well, I have to say, they were pretty darn amazing.  *Brush my shoulders off*  ;)   

Peanut Butter ‘N’ Banana Pancakes

Ingredients:

1 tablespoon peanut butter (melted a bit)

1/2 ripe banana

1 tablespoon brown sugar

1/8 cup whole wheat flour

1/4 cup oats

1/4 cup vanilla soymilk

1 tablespoon all-natural applesauce

Directions:

Melt peanut butter in microwave for a few seconds in the microwave.  Mash banana and stir in with peanut butter.  Add the rest of the dry ingredients and mix well.  Then add wet ingredients and stir together.  Cover skillet with cooking spray and heat on the stove on medium heat.  Pour 1/4 cup batter in rounded cakes on the skillet.  Flip when they start to bubble through or when one side is cooked.  Add your favorite toppings such as nuts, powdered sugar, or maple syrup.  Makes 1 serving (2 small pancakes).

  

A hot mug of coffee accompanied my pancakes.  It was just as heavenly as I had imagined….

Mmmmm…. pancakes…Elvis style! I love PB&B as well. This is such a wholesome recipe. I can’t wait to try it this weekend :)

I love almond butter and bananas! I could seriously eat it every day! :)

My favorite topping for pancakes is usually fresh fruit and little syrup.

You are absolutely BRILLIANT!! Seriously, nothing is better than pb and bananas, I need to try your pancakes asap! I really think I could survive off of bananas/apples and pb! Hope you are having a great day gorgeous girl!

We both love peanut butter and banana sandwiches. It is one of our favorites!! Will try the pancakes. They sound delicious. Grandpa loves to make pancakes for breakfast. We often put bananas or fresh blueberries mixed in and during strawberry season slice strawberries on top. Declicious!!!
