Pumpkin Almond Butter

I hope your Monday has been a fabulous one so far!  I apologize if my blog has been shown as under maintenance or if my post from this morning hasn’t shown up for you all today.  Ryan from http://revivemyblog.com has been helping me switch over my blog so it can be self hosted rather than a wordpress.com blog.  I definitely recommend him and his services!  He did a wonderful job and was very helpful and patient with me and my NON tech savvy ways. :)  Finally I am officially a self hosted blog – woohoo!  For those of you that don’t understand what that means, don’t even worry about it… I still don’t fully understand it.  I do know that I have a lot more capabilities and freedom with my blog now, so that is good news!


I was on Katie’s blog a week or so ago, and she had posted a recipe with pumpkin and asked her readers what else we thought pumpkin would be tasty with.  I was trying to think beyond the originals such as bread, muffins, pancakes, and cookies.  My mind wandered to pumpkin nut butter!  I was immediately excited and decided I would be testing it out ASAP.  

Last Friday, I was out and about doing some errands and stopped at WinCo to pick up some groceries.  They have a ton of bulk containers, so I decided to get a bag of almonds to create a pumpkin almond butter.  I was so excited for it that I immediately tried it out when I got home.  I whipped out my food processor and got to work! 

Pumpkin Almond Butter


3 cups raw almonds

1 cup pumpkin

1 teaspoon cinnamon

2-3 tablespoons brown sugar (depending on how sweet you want it)


Blend almonds in food processor until mostly creamy (about 4 minutes).  Add pumpkin and blend another minute.  Add cinnamon and brown sugar.  Blend until all ingredients are mixed together. 


YUM!  YUM!  YUM!  I’ve already tried this on bread, muffins, and in oatmeal.  Oh, and by the spoonful too. :)  I think next will have to be pumpkin peanut butter!

    I saw the title of this post and did an o.m.g out loud hehe this sounds genius! I found pumpkin butter last year at Trader Joe’s and it was ridiculously good, but the idea of mixing it with the nut butter sounds so amazin!

    We had a potluck party a couple years ago in which everyone had to bring something made with pumpkin, it was fun and interesting! Dips and soups and I made these curry pumpkin balls to dip in a sauce. Someone made a stew that was cooked in the pumpkin with chunks of pumpkin as well – deliciousI was amazed by all the selections! Whoo knew? I was surprised! I am going to try this Pumpkin almond butter!
