In honor of Cody and his birthday, I made a “cookie cake” for him. I have made one for him each year for his birthday since we’ve been together, and I hope it’ll continue to be a fun tradition. He is not a huge fan of regular cake, but is a true lover of chocolate chip cookies. Needless to say, a “cookie cake” is much more fitting for him.
Birthday Cookie Cake with Cookie Dough Frosting
1 cup softened butter (2 sticks)
1 cup brown sugar
3/4 cup sugar
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups semi sweet chocolate chips
Ingredients for Cookie Dough Frosting:
1/2 cup softened butter (1 stick)
1/3 cup brown sugar
1/3 cup sugar
1/4 teaspoon vanilla
1/4 cup milk
3/4 cup all-purpose flour
Preheat oven to 375 degrees. Grease a pie pan and set aside. In one bowl, cream together butter and sugars. Add eggs and vanilla. Mix well. In another bowl, mix dry ingredients together. Add dry ingredients to butter and sugar mixture. Fold in chocolate chips. Place dough in pie pan. Bake for about 30 minutes or until center is set. Let cool. Mix together cookie dough frosting ingredients. “Frost” cookie cake with the cookie dough frosting. Sprinkle with chocolate chips or decorate as you wish.
