Boy oh boy, do I have something exciting to share with you today! As you may have guessed from the title, Pumpkin Granola! Yes, it’s amazing as it sounds, and I’m not lying – I promise.
When we were at Costco on Sunday, I saw a box of pumpkin-ish granola cereal, and I was *this close* to putting in our cart until I realized that I could make something similar myself for a lot cheaper. So as you may have noticed on my grocery list yesterday, I most definitely grabbed a can of Libby’s 100% Pure Pumpkin to give it a try.
Last night I whipped up my little experiment, and success it was! Pumpkin + granola = amazing combo.
Serves: 4 (1/4 cup servings)
Prep Time: 5-7 minutes
Cook Time: 15 minutes
- 1 cup oats
- 2 tablespoons canned pumpkin
- 2 tablespoons honey
- 1/4 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1/3 cup raisins
- Preheat oven to 325 degrees and spray a baking sheet with cooking spray.
- Measure out and place all ingredients in mixing bowl.
- Mix thoroughly until oats are tossed in other ingredients.
- Spread out evenly on baking sheet and place in oven.
- Bake for about 15 minutes.
- Let cool and add raisins.
It’s so simple and delicious…and rather addicting! I couldn’t stop eating it as I was baking it last night.
