Pumpkin Granola + Giveaway

Boy oh boy, do I have something exciting to share with you today!  As you may have guessed from the title, Pumpkin Granola!  Yes, it’s amazing as it sounds, and I’m not lying – I promise. ;)

When we were at Costco on Sunday, I saw a box of pumpkin-ish granola cereal, and I was *this close* to putting in our cart until I realized that I could make something similar myself for a lot cheaper.  So as you may have noticed on my grocery list yesterday, I most definitely grabbed a can of Libby’s 100% Pure Pumpkin to give it a try.

Last night I whipped up my little experiment, and success it was!  Pumpkin + granola = amazing combo.

Pumpkin Granola

Serves: 4 (1/4 cup servings)

Prep Time: 5-7 minutes

Cook Time: 15 minutes

Ingredients:

  • 1 cup oats
  • 2 tablespoons canned pumpkin
  • 2 tablespoons honey
  • 1/4 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/3 cup raisins

Directions:

  1. Preheat oven to 325 degrees and spray a baking sheet with cooking spray.
  2. Measure out and place all ingredients in mixing bowl.
  3. Mix thoroughly until oats are tossed in other ingredients.
  4. Spread out evenly on baking sheet and place in oven.
  5. Bake for about 15 minutes.
  6. Let cool and add raisins.
  7. Enjoy!

It’s so simple and delicious…and rather addicting!  I couldn’t stop eating it as I was baking it last night.  Not only do you now have the recipe, but if you’re feeling lazy and want someone to make it for you, I’m offering a giveaway to one lucky reader!  The giveaway includes a couple batches of this Pumpkin Granola, a pumpkin candle, a bag of candy corn, and a couple other fun Fall items!

There’s so many things I love about the fall, it always makes me so nostalgic! I love having the windows open and snuggling up under blankets!

My favorite part about fall is probably seeing all the beautiful colors that the trees change to! I also love the return of warm oats after a hot summer! :-)

I love everything about fall: apple picking, jack o lanterns, candy corn etc. This looks like a perfect way to use up the bottom of the can of pumpkin

What is not to love about Fall? I love the feeling in the air-a feeling of anticipation, mischief, home. For some reason around Fall I feel the happiest, most at peace. The colors are beautiful, pumpkin is my favorite flavor, and all of the holidays are just around the corner. Yes, what’s not to love about Fall?
