WIAW {What I Ate Wednesday} #7: What I Really Ate TODAY

Happy Wednesday a.k.a. Hump Day!  Wednesday is the day for none other than WIAW (What I Ate Wednesday) started by the fabulous Jenn.  Check out the deets on WIAW here if you’re interested in learning more or joining in!

As my title says, today I’m going to share with you what I am truly eating TODAY.  Usually my WIAW are eats from Tuesday or another day previous to Wednesday.  I decided to share today’s eats with you rather than Tuesday or another day’s eats for a few reasons: 1) I’m able to share today’s eats because I’m doing my WIAW post later in the day ; 2) My dinner is “on-the-go” today so it’s already prepared and packed; 3) I was lazy yesterday and forgot to take photos of everything I consumed.  Oops!

 

Alright so here we go!  (Sorry in advance for the terrible photos today.  I didn’t have my better camera on hand.)

 

BREAKFAST

Adam’s All Natural Crunchy Peanut Butter and a half of a sliced banana atop a piece of toasted wheat bread

This is one of my favorite meals/snacks.  It frequented my meals in college, and it still shows up fairly regularly now too.  

A mug of hot coffee (obviously ;) )

I have been sprinkling a few good shakes of cinnamon into my coffee grounds before I start the coffee maker.  It gives it a delicious subtle cinnamon taste to the coffee.  

 

LUNCH

Baked sweet potato sprinkled with brown sugar

I don’t think I could ever get sick of sweet potatoes.  Good thing they’re cheap, healthy, and filling!

Sliced apple dipped in plain nonfat Greek yogurt, cinnamon, and Love Grown Apple Walnut Delight Granola

I don’t know why I’ve never tried this combo before – it was excellent!

 

SNACK

Cashew Cookie LARABAR

LARABAR was kind enough to send me a few samples of their bars recently.  Along with the Cashew Cookie, they sent me Chocolate Chip Cookie Dough,  Peanut Butter Cookie, and Peanut Butter Chocolate Chip.  Cashew Cookie was probably my least favorite out of all of the kinds they sent.  I think the strong taste of the dates somewhat turned me off.  Chocolate Chip Cookie Dough or Peanut Butter Chocolate Chip are tied for first place as my favorites!  I do love the all-natural and simple ingredients that are included in every LARABAR.  They fill me up for a great afternoon snack as they have a healthy balance of protein and fiber.  

 

DINNER

Un-persnickety White Bean Burger (thanks Chelsey!) and black beans over a spinach salad with a pear on the side

I made these white bean burgers the other night that I LOVE!  I made some extras to pack for on-the-go meals.  This made for a perfect on-the-go dinner before church this evening.

 

EVENING SNACK/DESSERT

    Chocolate or something related to pumpkin or both??
    The only larabar I like is the apple pie. All the others are too dry. I wonder if larabar makes a pumpkin pie bar…now that is something I can get beh1nd!
