It seems like that extra hour that “Fall Back” gives us seems to ease stress levels and help everyone feel that much more productive. I love it! Our day yesterday was a great mix of productivity, relaxation, and good company.
The morning started out with an early morning meeting before church with my team leaders (i.e. nursery, preschool, elementary, etc.). I brought some of the Banana Chocolate Chip Muffins I made on Friday to share. We had a successful meeting that included good feedback, some great ideas, lots of encouragement, and prayer. It was a nice way to start the morning. Church went well, as usual. I noticed a lot more visitors than normal which is always a plus!
Cody and I decided that after church we needed a little bit of quality time together to catch up with each other since he was at our church youth event on Friday evening and Saturday. We decided to enjoy a nice lunch at Sweet Tomatoes together. We have never gone out to eat a ton, but lately we’ve really been “cracking down” and rarely go out to eat anymore. Needless to say, this was definitely a treat!
I started out with a salad beast complete with carrots, tomatoes, broccoli, mushrooms, onions, hard boiled egg, kidney beans, and garbanzo beans on a bed of spinach and romaine lettuce. Delicious!
We used to go to Sweet Tomatoes fairly often when I was a kid, and I have always been in love with their blueberry muffins. They have been my favorite since I can remember. Back then I ate 2-3 of them since I could afford eating that many, but I figured I should probably stick to one these days.
I got a muffin, and I also eyed a sweet potato-apple-raisin dish that is a “special” for the month of November. Of course I had to try some of it! I got a small spoonful of the sweet potato dish, a blueberry muffin, and a small bowl of their minestrone soup. I got back to the table and was so excited about my muffin and other finds that I completely spaced taking a photo before I inhaled them. Oops! Needless to say, it was all delicious, and the blueberry muffin was just as heavenly as I remember.
I never can leave that place without some vanilla frozen yogurt. I got a small(ish) bowl of it and topped it with a little almond granola and was good to go. Simple but perfect!
We walked out of there happily stuffed to the brim! It was decided that we’d be having a very light dinner.
It ended up that our “dinner” ended up being some of Courtney’s Apple Crisp at our small group Bible study meeting. Neither of us were hungry before small group, so we just finished the night with a little apple crisp and called it good. The first and third Sunday evening of each month, we meet with a small group from our church to visit, pray, and dig into the Bible. We all rotate bringing a snack or dessert to share, and this week was our turn to bring something. I was eyeing Courtney’s Apple Crisp when she mentioned it recently on her blog, so I immediately knew I wanted to make it to share with our small group. It smelled heavenly as it was baking in our oven yesterday afternoon!! Even though I was still full from lunch, I couldn’t wait to dig in and try it out. We brought some vanilla ice cream to top it with too. I loved it, and it seemed like everyone really enjoyed it too! Success!

I went to Sweet Tomatos after reading about it on Chelsea’s blog. I loved it! Especially the way they cut beets to look like crinkle fries. And obviously the soft serve.

Let’s see…what did we do this weekend? Perfectly in line with your post actually, I spent what felt like a million hours bottling applie pie filling for apple pie and apple crisp. Ended up with 26 quarts. Then I had to finish it by trying a homemade apple pie. Phew, it was exhausting

I love Sweet Tomatoes. They always have great extras to try and I love their seasonal soups. I too can’t leave without yogurt. It’s the perfect way to end a meal there!
