Brunch Date

I mentioned earlier this weekend that Cody and I had planned a date night for Saturday evening, but then we decided to postpone it to yesterday since he got home later than expected on Saturday.  Instead of doing a typical dinner date, we opted to use a Cracker Barrel gift card we had to go for a “brunch date” after church.  It didn’t feel quite as “date-ish”, but we still enjoyed the quality time together and we always love a “free” meal.

 

As we waited for our food, we played a little of this game…

I have no idea what the name of it is (is there a name?).  The idea of the game is to end up with the least amount of pegs on the board.  To get rid of the pegs, you “jump” a peg over another peg.  The peg that gets jumped over is removed.  Does that make sense?  Well anyway, it was fun and quite challenging!  I’m terrible at these little strategy type games.  Cody, on the other hand, is pretty much genius at them.  Not fair.

 

Even though it was 1 o’clock in the afternoon, I decided a cup of coffee was necessary.  For whatever reason my body decided it needed to wake up at 4:30 yesterday morning, so it was a nice little pick-me-up.

For my meal, I ordered the “Meat ‘N’ Eggs” which consisted of two eggs, a choice of meat, sliced tomatoes, and a piece of wheat toast (unpictured).  I opted for poached eggs (with runny yolk – perfect for dipping my toast into!) and turkey sausage patties.  Yum!

The rest of the afternoon was spent lazily on the couch.  Cody played football on his Xbox while I read blogs and drifted in and out of sleep.  It was pretty glorious.

 

I finally peeled myself off the couch to make some dinner.  I decided to come up with some sort of bean burger, which actually came out pretty darn good if I say so myself! Winking smile  I’ve always loved veggie/bean burgers, but I never realized how simple they were to make until I came across a few easy peasy recipes within the past few months.  I finally decided to experiment with my own little recipe!

 

Chickpea Zucchini Veg-Burger

Servings: Makes 6 patties

Prep Time: 5-10 minutes

Cook Time: 5-10 minutes

 

Ingredients:

  • 1 can chickpeas (garbanzo beans)
  • 1 cup chopped zucchini
  • 1/2 cup oats
  • 1/8 cup ketchup
  • 1 teaspoon garlic powder
  • 1/2 teaspoon seasoned salt
  • 1/2 teaspoon black pepper

 

Directions:

  1. Dump all of the ingredients in a food processor (or blender).
  2. Blend until mixed together well.  (Don’t over blend otherwise it will turn into more of a hummus consistency!)
  3. Form mixture into six patties and set aside.
  4. Cover a large skillet with cooking spray and place on medium heat.
  5. Cook patties on skillet for about 5-8 minutes on each side or until lightly browned. 
  6. Enjoy on a bun, atop a salad, or by itself!

I served some sweet potato wedges and a simple salad alongside the burgers that made up a light, perfect, and easy meal.  If you need an extra idea for dinners this week, this is a great one!

Mmm cracker barrel is so good! I haven’t been there in such a long time though. And your burger looks and sounds delicious! Yum yum :D . My Sunday was pretty lazy..it was really nice!

Oh man, I LOVE Cracker Barrel! And I am notorious for owning that little peg game every time (although I’ve never been able to leave only 1 left)

Look at you–waking up at 4:30 AM for no reason! That is totally Brittany-status right there

I used to go to Cracker Barrel all the time as a kid living in FL. I loved it because I was obsessed with Beanie Babies, so I’d be begging my mom constantly to buy me one from the little gift shop part of the restaurant – or about a million other things I wanted! I don’t even remember what I used to eat there because I was the pickiest kid and didn’t like anything. Knowing me I probably just ate biscuits haha. Your breakfast looks satisfying! I remember playing around with that peg game and having no idea how to play.

I love Cracker Barrel! Only my mom and I like it in our family though, so whenever it’s just us girls that’s where wusable to go! We always split the chicken and dumplings meal with green beans, carrots, cornbread and biscuits! Yum!

I have never been there but it’s literally my grandma’s favorite restaurant! it’s basically her yearly indulgence to go there because she always orders the pecan pancakes… obviously not the best for you, but she loves them!

I love that the Cracker Barrel has healthier menu options and I love their breakfasts.
My Sunday was also a lazy one….after church I just cozied up until it was time to head back around 4:30. Love those kind of days. :)

I adore Cracker Barrel – unfortunately most of my favorite eats there aren’t gluten-free, so I don’t go there much, but I love hashbrown casserole, mac n cheese and that game! Glad you guys got to have a brunch-date!

We have a Cracker Barrel not too far from us, but I have never been! Maybe I’ll have to try it out!

you should! it’s kind of more of a “southern”/country kind of restaurant. for breakfast, they’re big on the egg, meat, and biscuits. for lunch/dinner, they have chicken & dumplings, meatloaf, etc. they do have lighter options though which i really like!

Oh my goodness, my boyfriend and I LOVE cracker barrel. I don’t usually like a ton of chain restaunts, but I will always love Cracker Barrel. Your pictures are making me want to go there :-) I always get their blueberry pancakes. So yummy! When I was training for my marathon, I would get them every so often after long runs and make my own blueberry pancakes after all the other long runs. Probably the reason I gained weight while training :-)

I absolutely love Sundays like that. There is nothing better than going to church, having a nice brunch with friends or family and spending the rest of the day chillaxin and doing whatever you feel like. You need a day like that every once in a while to decrompress from the busy week and get prepared for the one ahead.

Cracker Barrels are literally everywhere in the south and I have got to say, my favorite thing to get whenever I get the chance to go is either the pancakes or their famous chicken ‘n dumplins lol. SOOOO yummy! I would def recommend them :)
