I mentioned earlier this weekend that Cody and I had planned a date night for Saturday evening, but then we decided to postpone it to yesterday since he got home later than expected on Saturday. Instead of doing a typical dinner date, we opted to use a Cracker Barrel gift card we had to go for a “brunch date” after church. It didn’t feel quite as “date-ish”, but we still enjoyed the quality time together and we always love a “free” meal.
As we waited for our food, we played a little of this game…
I have no idea what the name of it is (is there a name?). The idea of the game is to end up with the least amount of pegs on the board. To get rid of the pegs, you “jump” a peg over another peg. The peg that gets jumped over is removed. Does that make sense? Well anyway, it was fun and quite challenging! I’m terrible at these little strategy type games. Cody, on the other hand, is pretty much genius at them. Not fair.
Even though it was 1 o’clock in the afternoon, I decided a cup of coffee was necessary. For whatever reason my body decided it needed to wake up at 4:30 yesterday morning, so it was a nice little pick-me-up.
For my meal, I ordered the “Meat ‘N’ Eggs” which consisted of two eggs, a choice of meat, sliced tomatoes, and a piece of wheat toast (unpictured). I opted for poached eggs (with runny yolk – perfect for dipping my toast into!) and turkey sausage patties. Yum!
The rest of the afternoon was spent lazily on the couch. Cody played football on his Xbox while I read blogs and drifted in and out of sleep. It was pretty glorious.
I finally peeled myself off the couch to make some dinner. I decided to come up with some sort of bean burger, which actually came out pretty darn good if I say so myself! I’ve always loved veggie/bean burgers, but I never realized how simple they were to make until I came across a few easy peasy recipes within the past few months. I finally decided to experiment with my own little recipe!
Chickpea Zucchini Veg-Burger
Servings: Makes 6 patties
Prep Time: 5-10 minutes
Cook Time: 5-10 minutes
- 1 can chickpeas (garbanzo beans)
- 1 cup chopped zucchini
- 1/2 cup oats
- 1/8 cup ketchup
- 1 teaspoon garlic powder
- 1/2 teaspoon seasoned salt
- 1/2 teaspoon black pepper
- Dump all of the ingredients in a food processor (or blender).
- Blend until mixed together well. (Don’t over blend otherwise it will turn into more of a hummus consistency!)
- Form mixture into six patties and set aside.
- Cover a large skillet with cooking spray and place on medium heat.
- Cook patties on skillet for about 5-8 minutes on each side or until lightly browned.
- Enjoy on a bun, atop a salad, or by itself!
I served some sweet potato wedges and a simple salad alongside the burgers that made up a light, perfect, and easy meal. If you need an extra idea for dinners this week, this is a great one!
