I’m almost always more of a chocolate girl than a fruit girl. Give me the choice between a big brownie sundae or an apple pie, and I’ll choose the brownie sundae in a heartbeat. No questions asked. I love my chocolate. Don’t get me wrong, I still enjoy my fruit pies and cobblers, but chocolate always wins.
Chocolate might just have a close runner-up though – lemon. Lemon bars. Lemon pound cake. Lemon muffins. I just love lemon desserts!
Needless to say, I was pretty stoked when I won a giveaway that included some Lemon NuNatural Liquid Stevia Drops. I have all sorts of fun ideas for these lemon drops.
First up? *drum roll please*
Healthy Frosted Lemon Muffins
Servings: makes 9-10 medium muffins
Prep Time: About 10 minutes
Cook Time: 10-12 minutes
Muffin Ingredients:
- 1 cup whole wheat pastry flour
- 2 tablespoons of sugar or powdered stevia
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 1 tablespoon chia seeds
- 1 egg
- 1/4 cup unsweetened applesauce
- 1/4 cup low fat milk
- 1/2 cup plain Greek yogurt
- 2-3 full drops of NuNaturals Lemon Liquid Stevia
- 1/2 tablespoon lemon juice
Frosting Ingredients:
- 1/4 cup plain Greek yogurt
- 2 tablespoons ricotta cheese
- 1 full drop of NuNaturals Lemon Liquid Stevia
Directions:
- Preheat oven to 350* F. Line a muffin tin with 9-10 liners.
- Combine all dry muffin ingredients into a mixing bowl and stir together well.
- Add wet muffin ingredients to the mixing bowl and stir together well.
- Fill each muffin tin liner about 2/3 full with the batter.
- Bake muffins for about 10-12 minutes or until knife comes out clean.
- While muffins are baking, use a hand mixer to blend the Greek yogurt, ricotta cheese, and liquid stevia.
- Let the frosting set in the refrigerator.
- Let the muffins cool completely.
- Frost the muffins. Enjoy!
These are super duper easy, healthy, and may be eaten as part of a meal, snack, or dessert. Or all three. I won’t tell.

I’m actually more of a fruit girl! and I LOVE lemon! When I was little I would always get a lemon bar if it was a dessert option! We’d go to Bagel & Bagel (now Einsteins…) after soccer games and they had the best lemon bars!

Those look so good. It’s funny because my husband refuses to eat anything, I repeat, anything with lemon because his Mom made a terrible lemon fish dish when he was younger. He and his siblings still talk about it, so I have slowly eliminated lemon dishes from our house. Haha!
haha that is too funny. my husband doesn’t like anything with lemon either, so i get these all to myself!

I used to absolutely, hands down be a chocolate addict but I find myself much more drawn to fruity desserts these days. I don’t have a favorite lemon dessert but I have been craving some sort of lemon bar or lemon custard. If anyone can find me a good vegan recipe (as in you tried it and you loved it) for that, I will be forever grateful!

YUM!! I don’t like super chocolatey things, I would definitely prefer fruit.. However, I do love fruit things with a drizzle of chocolate! Best of both worlds!

Chocolate *always* wins, for sure! Especially when combined with peanut butter, right?
The only exception I make is with ice cream. For some reason, I always choose vanilla-based flavors over chocolate-based flavors! Maybe it’s because I consume so much chocolate already?
Your lemon muffins look fantastic! I may try substituting almond flour for the whole wheat and see how they turn out. My favorite lemon dessert of all time is lemon bars! LOVE them. I also like lemon curd (which tastes like the filling of the lemon bars) on cake, toast, meringues…anything!

I do love fruit, but chocolate definitely wins myt heart. And I actually am not at all a lemon fan in sweet form for some reason! I love it in tea, hot water, or lemonade, but can’t stand it in cookies or muffins or anything. Who knows why. I’d have to try these out minus the lemon, maybe with vanilla! Have a great weekend!
That is exactly the same for me! I absoloutley adore chocolate but Lemon is ALWAYS a runner up! I really like a simple big lemon cake!! Or lemon cheescake!
