Peanut Butter Cookie Dough Overnight Oats

by Ashley on April 21, 2012

If you were to ask me what my favorite things were to eat, peanut butter and cookie dough will most likely always be included in my answer.

IMG_1903For example, last night we went to Dairy Queen with our friends for some ice cream and no questions asked I was getting a Blizzard.  Love those things.  But then the hard part comes when I have to decide whether I want a Reese’s Peanut Butter Cup or a Cookie Dough Blizzard…  Toughest decision ever!  Life’s problems, right? Winking smile (FYI, I went with the Reese’s Peanut Butter Cup this time.)

Needless to say, what could be better than peanut butter and cookie dough all in one?!  Sounds like heaven to me.  This lady knows what I’m talkin’ about.

I went on to do the next best thing and tried to make my overnight oats resemble peanut butter cookie dough.  Mission accomplished.

Peanut Butter Cookie Dough Overnight Oats

Servings: 1

Prep Time: 5-10 minutes + overnight

Cook Time: Nada

Ingredients:

  • 1/2 cup old fashioned oats
  • 1/2 tablespoon chia seeds
  • 2 tablespoons peanut flour (or PB2)
  • 2/3 cup milk (I used 1%)
  • 3-5 drops NuNaturals Vanilla Liquid Stevia (or sweetener of choice + 1/4 teaspoon vanilla extract)
  • 1 tablespoon all natural peanut butter
  • 1/2 sliced banana or other toppings of choice

Directions:

  1. Combine oats, chia seeds, peanut flour, and milk in a sealed tupperware container.
  2. Let it set in the refrigerator overnight.
  3. In the morning add your sweetener (and vanilla if needed) and peanut butter.  Stir all together.
  4. Top it with a sliced banana, chocolate chips, nuts, or any other toppings you like.  Enjoy!

Now that it’s getting warmer, I’ve been eating overnight oats a few times a week.  It’s a cold breakfast for a warm day, easy to prepare, and oh so delicious!

P.S.  There’s still time to enter in the NuNaturals giveaway!

I am obsessed with overnight oats — definitely trying this combo!

I feel like I was reading my own blog when you were talking about DQ! I ALWAYS struggle with deciding between the pb cup & cookie dough choices!

Cookie dough will always be my biggest weakness! Not so much PB because of my allergies though. :P

Overnight oats is my favorite new breakfast! As a college student, they’re perfect because I’m always in a rush to get to class on time in the morning. Not to mention, it’s HOT in Florida, so cold breakfast food is always welcome :)

Okay, I know this sounds crazy, but I’ve literally had 2 DQ blizzards in my life. It just wasn’t a place we ever went to when I was growing up! I went once when I was a camp counselor and then once on a road trip when they had the thin mint blizzards! I would choose reeses peanut butter cup, or snickers! And I haven’t ever put PB2 in my overnight oats, I’m so trying this for my breakfast Monday morning! Everyone in class will be so jealous… haha.

DQ Blizzards are the best! I love the sinful yet scrumptious strawberry cheesecake blizzard. Certain foods, like a DQ blizzard, taste so good it makes me do a happy dance! lol

hehe you make me so happy :) So genius and inventive! What a great idea! I am not a huge fan of peanut butter, but cookie dough is ok :) Sometimes too sweet. I like peanut butter cookies though? ;) Doesn’t make much sense does it!?!?!?

At DQ I never get blizzards! I have never actually ever ordered a blizzard before, just taken spoonfuls of other peoples ;) I am much more of a sundae girl :D And I always get three toppings :D pineapple, strawberry, and chocolate :) hehe!

So I always struggle between Reese’s pb cup and butterfinger. But I don’t sacrifice. I get them both. And not half/half, I get super specific and make them give me pb cup “with an additional serving” of butterfinger. It costs like $.50 more but who cares. It’s amazing. Also, am trying these overnight oats tomorrow :

Oh girl, I’m LOVING the double peanut butter flavor (PB2 + PB) in this recipe! You’re not going to believe this, but I’ve actually never tried overnight oats! They’re all over the blog world, and they always look incredibly delicious, but I’ve just never been a huge oats girl. I think it’s simply because I have vivid memories of eating think globs of plain oatmeal with raisins growing up (my dad’s specialty) and wishing that I could have a frosting-covered Pop Tart instead! Hehe. I’m going to have to overcome my oat fear next week though, because I’m starting a new meal plan to go along with my new lifting plan. I’ve been warned that oats ARE included! :-p

I haven’t had a DQ Blizzard in ages because there aren’t any DQ’s in the DC area! I remember loving pineapple Blizzards when I was young though (a bit random, no?), but now I’m pretty sure I’d go with the Reece’s peanut butter cup!

Hope you’re enjoying your weekend! Hugs! xoxo <3

it’s ok, it’s actually kind of refreshing to know at least one healthy living blogger out there doesn’t love oats. ;) i do hope that one day you’ll start to like them, but it’s all good if you don’t! and of course you’d pick reese’s pb cup… you’re my peanut butter/reese’s twin! hehe.

Yum! These overnight oats are so good. I didn’t have peanut flour so used 1 T coconut flour instead. Also, used 1 full T chia seeds. Increased the milk (light vanilla soy) to a full cup to give the extra chia somewhere to go. So delicious. Variants of overnight oats will be especially perfect once it gets hot outside. But it doesn’t have to be hot outside to enjoy them (or a Reese’s PB Blizzard at DQ, for that matter!).

did you know you can get BOTH blizzards, its just 39 cents extra! I can never decide if I want oreo or cookie dough so I have them put both toppings in mine and I enjoy every single bite :) :)

This sounds great. I always bring a container of “overnight oats” to work with me for an afternoon snack that is a little bit sweet. I am going to have to give this a try.

I packed this for breakfast this am and it was SO good!!! I added 2 oz of plain Greek yogurt since I used almond milk, which has little protein. I need to get my hands on those stevia drops ASAP.
