Pumpkin Chocolate Chip Whole Wheat Waffle from Scratch

Good morning!

I just love Saturdays. I don’t set my alarm clock, I ease my way into the morning, and my favorite – I take my time making and enjoying a special hot breakfast. I usually try to make something I wouldn’t normally make throughout the week which usually ends up being along the lines of pancakes, French toast, or waffles.

I used to say waffles were my favorite, but I think pancakes have won me over within the past year or so with waffles still in a close second. However, this morning I was truly craving a waffle. After lying in bed for a bit, I finally wandered into the kitchen to mix something up.

We didn’t have any Kodiak Cake Mix to help me out, so I winged it and came up with this Pumpkin Chocolate Chip Whole Wheat Waffle. It was everything I had hoped for and more.

Pumpkin Chocolate Chip Whole Wheat Waffle

Servings: 1 (plus a little more)

Prep Time: 5 minutes

Cook Time: 5 minutes

Ingredients:

  • 3/4 cup whole wheat flour
  • 1/2 teaspoon baking powder
  • pinch of salt
  • 1 egg
  • 1/4 cup pumpkin
  • 1/4 cup unsweetened applesauce
  • 1/2 cup low fat milk
  • 3/4 teaspoon pumpkin pie spice
  • 1/8-1/4 cup mini chocolate chips

Directions:

  1. Preheat waffle iron.
  2. Add ingredients to a small mixing bowl and stir until mixed together well.
  3. Spray waffle iron with nonstick cooking spray.
  4. Pour batter into waffle iron and let cook.
  5. Place waffle on plate, add your favorite toppings, and enjoy!

Note: There might be some extra batter leftover. I used it to make another “mini waffle” or you could make it into a couple pancakes to save for another time.

Of course I ate my waffle with a little peanut butter and maple syrup. There’s no other way. Winking smile

1) pancakes 2) french toast 3) waffles. Although French toast and pancakes are really tied, I love both! I’ve never been a huge waffle person. But that looks like it only took about 10 minutes to make, you could make it during the week, nice and easy! And anything with chocolate chips is a win :)

I probably could, but it’s kind of a pain to drag out the waffle iron, wait for it to preheat, and then clean it all up afterward.

Oddly, waffles are always the last on my list. I think mine would go pancakes, french toast and then waffles. Call me crazy but I never think waffles have as much fluffy flavor as pancakes. These look sensational though!

This looks amazing! If only I had a waffle maker… I think I need to make a trip to mom and dad’s house and steal theirs haha. ;)

French toast would be ranked first for me! I love the way it tastes when it gets soaked in maple syrup. Mmm!

I can’t even remember the last time I broke out the waffle maker! Sad, because that’s definitely my number 1, followed by french toast, then pancakes.

I remember once I had a Belgian waffle that was topped with custard, more fruit than I’d ever seen before in my life (literally, the pile was bigger than my face) and whipped cream. That might go down as the best breakfast I’d ever had.

You already had them in order for me! 1. Waffles, 2. Pancakes, 3. French Toast. As for toppings: I LOVE LOVE LOVE peanut butter :) especially with some chopped up bananas, or a dollop of jelly/jam for a pb&j waffle :) Oh man-I’m really craving a waffle now!

Waffles are my favourite- definitely a texture thing! These look delicious! You can’t beat peanut butter & banana or berries & maple syrup as toppings!

You’re making me feel like I really need to dust off the waffle maker because I definitely don’t make them as often as I should, and they’re my favorite of the three. Pancakes come second, and French toast comes in third. As for waffle toppings… I love the classic butter and maple syrup route :D

If I’m having buttermilk pancakes or a traditional Belgian waffle, I love it topped with real butter and pure maple syrup. Yum!

Power to you for only making one waffle. I probably would have made 3, ate them all, then cried later about how much I ate hahah. This sounds fantastic. Too bad I don’t have a waffle press…just another thing to drive down the street and steal from my mom. I’m sure deep down somewhere she loves me for all the things I take off her hands ;) haha

Pancakes, french toast, waffles…I’ve never had a fresh waffle, sort of unheard of in Ireland!! They might move up otherwise! I’m vegan so I make a vegan version of french toast with wholemeal soda bread! Favourite topping of the moment is SunButter, chia seeds, desiccated coconut and fresh blackberries, with either grilled peaches or banana!

Loaded question!! And one that I’ve been trying to sort out in my mind for a while. But in my heart that’s like deciding whether or not I like Peeta from The Hunger Games or Four/Tobias from Divergent more … there are just so many pros to all of the choices!!
Convenience: (1) pancakes, (2) French toast, (3) waffles … which is why I usually have pancakes more often. But I’m more likely to cook them browner than usual an they’re not as great for PB spreading. So in my heart, it’s probably (1) French toast, (2) pancakes, (3) waffles. Which is funny, because I had a waffle for breakfast this morning as well, when I easily could have had the other two … haha. I’m a weird one … OH. But it HAS to be the right bread for the French toast!!
I think I got way too into this … #sorryimnotsorry ;)

I seriously love all three options … but if it’s a fresh Belgian waffle, it would probably rank: waffle, pancakes, then French toast. And I LOVE peanut butter and syrup on my waffles, too!!

I haven’t had a waffle like this is toooo long!! This one looks delicious!! My rank would be: Waffles, pancakes, and then french toast. The eggyness of french toast weirds me out. Plus I am vegan so I have to make a vegan version using bananas..which is actually really good.

Love waffles but I don’t eat them too often! I even have a waffle maker! I always used to make leftovers and freeze them for easy a.m. meals!

That waffle looks divine. That’s a really hard choice for me. I love all three but I guess it depends on the flavor. Usually I go for waffle cause I like the crunchiness and it’s lighter than pancakes.

I am the same way with no alarm in Saturdays. I would have to say my rankings differ whether I am at home or out

Home: waffles, pancakes, french toast

Out: Pancakes, French toast waffles.

Restaurant pancakes are just so my better in my opinion ;)

Thanks for posting this, I was desperate to find a pancake waffle/pancake mix for breakfast over the weekend. I don’t have a waffle-maker unfortunately (*sobs*) but I used the batter to make some beefy pancakes. Yummy! :)

I wish wish wish I could just leisurely get up over the weekend, not set any alarm, roll outta bed, make breakfast and then just relax, but nope, I am out of bed by 6:15/6:30… just like my M-F so I can work out! It’s ridiculous how my work out is INGRAINED in my mind, but hey, I do sometimes come back to my house and… go right back to sleep, LOL!!!

Wow, I cannot even REMEMBER the last time I had “real” pancakes and waffles! I couldn’t even tell you which one I like better. Those EGGOS used to be fabulous but… sprinkles in my pancakes, common now! LOL! Why not eat one pancake and top it with crumbled waffles? Ah ha ha ha ah! Best of both worlds right there, no?
