Cranberry Walnut Bread

So I don’t like to brag or anything, but I have a pretty amazing recipe for you this morning…

Cranberry Walnut Bread

Servings: 1 loaf

Prep Time: 10 minutes

Cook Time: 50-55 minutes

Ingredients:

  • 2 tablespoons butter, melted
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1/2 cup unsweetened applesauce
  • 1/2 cup homemade cranberry sauce
  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 cup cranberries
  • 1/2 cup chopped walnuts

Directions:

  1. Preheat oven to 350* F and spray a loaf pan with cooking spray.
  2. Stir together butter, sugar, vanilla, eggs, applesauce, and cranberry sauce in a large mixing bowl.
  3. Sift together dry ingredients and add to wet ingredients. Mix well.
  4. Fold in cranberries and walnuts.
  5. Pour batter into greased loaf pan and bake for about 50-55 minutes or until toothpick comes out clean from center.
  6. Let cool and enjoy!

This bread is so good, in fact, that Cody opted to have it for breakfast yesterday morning over his usual beloved toast and milk (um, boring?). Now that says something my friends!

Each bite is bursting with a combo of sweetness from the brown sugar, tang from the cranberries, and crunch from the walnuts. It makes for the perfect holiday bread to power you through your Christmas shopping, to feed your guests that are in town, or for a quick and healthy snack during the busy-ness of the holiday season.

Enjoy warm with melted butter or top with some of your favorite nut butter!

As someone with a husband who ALWAYS wants Life cereal for breakfast (like, even if I make him eggs and French toast, he still eats a bowl of Life cereal on the side!), I know what a major deal it is for a guy to change up his breakfast plans haha! So this bread must be amazing! ;)

I may just have to whip this up between now and Christmas! We always have leftover cranberry sauce hanging around. Only about two people actually like it in my family (one is myself) :) !

My favorite quick bread is pumpkin or banana nut! I live all breads though, including, zucchini, lemon and chocolate chip!

Yummm!! I’d have to swap out the walnuts for maybe some pecans…walnuts are they only nut that I still can’t acquire a taste for!

Looks delicious! I love quick breads…banana breads are my favourite, I’ve lost track of how many varieties I’ve made ! Love this idea though, very festive!

I’m a big fan of quick breads. Chocolate chip banana is probably my favorite, but this bread sounds pretty darn amazing – a great way to use up leftover cranberry sauce!

Banana bread is my favorite type of quick bread. I can throw walnuts in, oatmeal, chocolate chips etc. and it has a whole different taste – I love it!

Yum!! I’m really not a fan of cranberries alone, but I love when they’re baked into goodies or mixed with other sweet things, so I’ll have to give this recipe a try!

Yum! Looks delicious! Cranberry question-you use fresh berries? No dried? And as far as the cranberry sauce, could you just use regular canned sauce? And if so, should it be the whole berry sauce, or the regular smooth canned kind? Just want to know what to buy! Definitely want to try this recipe!
