WIAW #67: Keen-Wa

Hey hey!

How’s everyone’s week treating them so far?! I feel like I’m finally getting back into the groove of “normal life” around here this week after the holidays and our trip down to Arizona. As great as the holidays were, it sure feels nice to get back on a normal routine.

Yesterday began bright and early at 5:30 AM with my stomach rumbling at me. I really didn’t have to get up until 7-ish, but apparently my body (aka Baby Hunter) was telling me otherwise. So I rolled out of bed and headed straight to the kitchen to get the coffee brewing and prep some breakfast. I decided on an egg and cheese sandwich since I had my glucose tolerance test soon after and didn’t want any extra sugars to compromise my results. I cooked two eggs in coconut oil, topped them with some melted colby cheese, and put it all on a whole wheat sandwich thin. Yum!

Since I was up pretty early, I had some extra time to sip my coffee, do my devotions, and read some blogs. It was so nice! After awhile, I got ready to go to my doctor’s appointment, downed the nasty juice I had to drink for my glucose tolerance test, and headed out the door.

I got to hear the amazing sound that is little Hunter’s heartbeat once again. It never gets old! The doctor also weighed and measured me, and everything is right on track! Woo hoo! I also got my blood drawn for the glucose test to see if I’m at risk for gestational diabetes. That was the not-so-fun part… I hate needles! Oh well, I obviously survived.

After my appointment, I dropped by the post office to mail off some thank you cards and drove through the car wash. With all of the snow and salt on the roads lately, my car has been so dirty! It felt so good to get it all clean and sparkly. By the time I got home, I was starving so I chopped up half of a banana and ate it with a ginormous scoop of peanut butter that I washed down with a small glass of milk. Nothin’ beats this snack!

I suddenly felt pretty exhausted soon after that, and I’m wondering if all of the blood they drew at the doctor had something to do with it. I decided to take a little power nap, and thirty minutes later I felt as good as new! I worked on returning some emails and other blog stuff, and then got to work on lunch. I decided to try out Stuft Mama’s Grain Free Microwave Pizza Crust, and I’m so glad I did! It took a little longer to prepare than most of my lunches do, but it was so worth it. I topped it with a little marinara sauce I had on hand, chopped green pepper, onion, mushroom, and mozzarella cheese. YUM!

I ended my lunch on a sweet note with a small handful of candied pecans we still have from Christmas.

I got to work on cleaning the house a bit since all of that has been a little pushed to the side lately with operation nursery going on. A clean house always feels so nice!

Soon after, I finally motivated myself to workout. For whatever reason, I’ve had a difficult time getting back into the groove of my workouts since the holidays. I’m still doing them, but it takes some extra effort to get me going. I did a strength + cardio circuit pregnancy fitness DVD that I look forward to sharing with you guys in the next couple weeks! By the time I was finished with my workout, I was hungry again so I went for a mug of Chobani with a chopped kiwi and Love Grown Granola. I also had a spoonful of peanut butter after that because apparently my stomach was a hollow hole. The peanut butter stuck to my ribs a bit and helped!

I got cleaned up, talked to the hubby on the phone for a bit, and then got to work on the massive pile of laundry that needed to be folded. Thank goodness I had The Bachelor to catch up on to keep me entertained. Oh boy, I won’t even go into my thoughts on some of those girls… Good thing Sean has a good head on his shoulders – at least I hope so.

I switched up my meal plan a bit and decided to swap Tuesday’s and Wednesday’s dinners. The Vegetable Quinoa Fried “Rice” just sounded so good last night! Plus, I was pretty eager to try quinoa for the first time. Yes, you read that right, I’ve never had quinoa before… Crazy, right? The nutritional stats are awesome, and it’s so versatile. I’ll definitely be buying it more in the future! Oh, and this dish was just as delicious as I had hoped!

Kind of a funny story too… I was definitely the girl that pronounced quinoa wrong for the longest time. I was talking with a lady at my church one day several months ago, and we were talking about various recipes and cooking. I said quinoa like “kwin-oa”, and she said, “You mean keen-wa?” Ha! I felt like such an idiot. So just in case you didn’t know, it’s pronounced KEEN-WA, not “kwin-oa”. Winking smile

After dinner, I satisfied my sweet tooth with one of those amazing Trader Joe’s Salted Dark Chocolate Peanut Butter Caramel Truffles that I mentioned last week. I’m actually surprised they’re still around! They’re just so darn good.

The rest of the evening was spent on blog stuff, spending time with Cody, and reading. Somewhere in there I had a piece of toast with peanut butter too. I’ve been loving this snack before I go to bed lately!

Aaaand wow, I realized this is an incredibly long post and is full of my rambling! Props to you if you made it this far!

One more thing! Thank you so much for all of your sweet comments on yesterday’s post! I appreciate all of your supportive words more than you know. Y’all are pretty much the best!

Quinoa, i think i pronounced it KIN O AH for years! LOL

Oh wow can’t believe you just tried quinoa! It’s a great addition to veggie burgers, delicious with a chili or in a soup, quinoa flour also makes amazing pancakes and if you can get quinoa flakes you can make quinoa flake bakes for breakfast…like baked oats!

Nope we are about to start the Bachelor tonight! I can’t wait! The cheesiness sucks me in everytime (and my husband but he hates to admit it!) And you’re definitely not alone in your quinoa mispronunciation! kin oh uh is how I thought you said it… We really like to do it in stir frys and just treat it like you would rice. Add meat and veggies and some olive oil with seasonings! So yummy! Have a great day!

Haha I feel like everyone pronounces quinoa wrong until they learn it correctly. After being told a million times, my dad is still always like “ki-no-ah” lol

I’ve determined that almost everyone pronounces quinoa wrong at first, including myself! I called it Quin-o-a for the first few months, until I saw it spelled out phonetically. I guess I was fortunate that I saw that before trying to use it in conversation!

I don’t cook it too often (the boyfriend isn’t a huge fan) so I usually make it like I would rice and keep it in the fridge for grab-and-go lunch situations.

And I’m thinking I need to plan a trip to the States just so I can look for those chocolates – they sound amazing!

I love me somet quinoa…yum! One of my favorite ways to eat it are cooking it with half water and half OJ and eatting it in the morning for breakfast! YUM.

So glad you loved the “rice” dish! It’s really one of my favorites. Ever since discovering quinoa, I hardly ever eat rice anymore. It just works so much better in stir fries!

I definitely did not know how to pronounce quinoa either for the longest time, but I think I just avoided saying the word altogether. I love creating quinoa bowls – quinoa mixed with chopped veggies and other ingredients. One of my favorites has feta, avocado, black beans, and sweet potato. Soo good!

Love your pregnancy posts, I am in my first trimester and we haven’t told anyone yet. So reading your posts helps me relate :) One question or matter of opinion—did you get your flu shot? I have never had one and we have our first doctor appt tomorrow, I’m assuming they’ll suggest one, but I worry about having one in case I would have a bad reaction since I’ve never gotten one….

Im a maternity RN- you should definitely get your flu shot- there is really nothing to have a bad reaction to- the virus they are giving you is dead. The only thing you might experience is some soreness around the injection site. No big deal. Not getting it puts your baby at a much bigger risk!!

There is mercury in the traditional flu shot, but from my understanding you can get a non-mercury one.

Erin, I didn’t get my flu shot… It’s something I’ve wrestled with, but I decided to just not get it. There are SO many strands of the flu going around and the shot only protects against one of them. I know there’s many varying opinions out there about it, so I think you should just do what’s best for you. I’ve just been doing my best to stay away from sick people, wash my hands a lot, get my sleep, and take my vitamins!

I didn’t get mine either!! And I’m due next month with no flu thank God!!! I agree with everything you say!! They say getting the flu CAN cause Aspurgers (autism!) but if you get the flu shot, aren’t you essentially giving yourself a strand of the flu?! Uh, no thanks!! I also may stand alone but I don’t trust the govt and why the push to get this friggin thing?! something doesn’t seem right! I will rely on my vitamins and immune system thank you!!

I pronounced it wrong for a long time too! I love it though, its a staple here, I love Quinoa Fried “Rice”, I use it in salads, for breakfast, as a side, in soups and stews… basically in everything!

So many good eats here! I love quinoa and how versatile it is! That “fried rice” recipe looks great; i’ll have to check it out. I’m a big fan of using quinoa as a base for stir fry’s.
I bought a container of dark chocolate covered almonds from TJ’s over the weekend and I, also, am surprised they’re still around! So, so good. Probably not for long, though. ;)

Ok, I’m so glad I’m not the only one who pronounced Quinoa wrong! I felt like such a fool when one of my friends laughed and corrected me! Sheesh haha! Your eats look delish and now I’m tempted to try Stuft Mama’s Grain-Free Pizza.

That pizza for lunch looks absolutely delicious! A tortilla pizza will probably be in my near future now. And a sparkly newly washed car really is the best feeling. I used a Groupon for an inside/out car wash last week…and having a clean car made me happier than I’d like to admit haha. It’s the little things!

I use to say it wrong all the time! I am watching The Bachelor this season, but I just skimmed through Monday’s episode. I can’t handle watching them all embarrass themselves so badly the first night!

I watched a short video on how to pronounce quinoa when I first read about it—that’s the ONLY reason I knew how to say it! My dad says it in a hilarious way!

I’m definitely watching the Bachelor, although no opinions on any of the girls yet! Haha other than that 50 Shades of Grey girl… Glad she went but she was amusing. And I think blogging leads to mispronunciation: we read all these words but don’t say them out loud to each other! I’m sure I’m saying something wrong…

I still have to try quinoa myself – almost everyone I know that has tried it has said good things…someday! Did your egg have much of a coconut flavor? I almost bought some coconut cooking spray the other day but was worried it would give too much of a coconut flavor to items I was cooking and my husband is not really a fan.

It’s definitely nice to get back into a normal routine after the craziness of the holidays, and I couldn’t agree more that a banana, nut butter, and milk is one of the best snacks around. So delicious, and so oddly comforting. And I’m pretty sure that everyone is guilty of mispronouncing quinoa… I act like a boss when I correct people, buuuuuut then I remember that I called it kwin-oa for the longest time as well, and I stop being so smug.

I love quinoa! I like to make quinoa salads with chickpeas, tomatoes, feta and parsley in the summers. Or it tastes great with some steamed kale, avocado, fried eggs, and hummus. I used to pronounce it “kwin-oh-ah” for the longest time too. :D

I pronounced it wrong in my head forever…then I saw someone spell in out like you did and I had a duh moment :) I like it in a greek or mexican tabbouleh-like salad, I’ve also made turkey quinoa muffins that were pretty good!
That pizza crust looks like such a great idea. I need some new lunch options. I was on a salad kick for a couple days, but at 13 wks pregnant nothing sounds good for long!

I’ve had that glucose tolerance test before and it is not fun! it’s so hard to keep down the nasty syrup you have to drink. Btw definitely keeping my eye open for those salted dark chocolate truffles they look incredible!

After reading about your pregnancy and one of friend’s, I am so curious to see how I eat as a pregnant lady someday. I think I will probably eat a house! All your food looks so healthy and delicious though. That pizza for lunch! Ah, I’d love to make a little mini pizza like that. Yum!

I never used to like quinoa until recently. I just made some with a chicken curry dish last week. I’ve also seen quinoa used as a breakfast cereal, kind of like oatmeal, that I’d love to try soon.

I have to say- the way that same people pronounce quinoa ANNOYS me. Like, when the put an emphasis on “wa.” Ugh! :)
I want to try that microwave crust…
And heck yes I’m watching hte Bachelor! I told myself not to even WATCH the first episode to not get sucked in… but I’m weak.
Man there were a lot of drunk girls!

I love quinoa. My favorite is a vegan sweet potato & black bean chili recipe that I found online. I’m not watching “The Bachelor” but never have. I like a slice of protein bread before bed too.

I will definitely be watching The Bachelor this season, although I haven’t seen the premiere yet thanks to being too busy with starting up classes again. That’s the plan for the weekend though! Gotta get my drama fix! ;) And I did not know how to pronounce quinoa for the longest time either. I think I just avoided saying it around other people haha

Ah, quinoa is such a strange word! I had been pronouncing it incorrectly (and had several variations of pronunciation) for the longest time, haha. I have tried it twice and didn’t love it, but I think I’m going to give this fried “rice” a try. I really want to love it!

This made me laugh SO hard! I definitely pronounced Quinoa the same way and I was talking to a sales associate in a health food store when he kindly pointed it out. Ooof. SO embarrassing!

I have been reading blogs for a while but I just stumbled upon your blog now. I don’t know how this happened?! I can’t wait to read more! Your story is inspiring for me! :o )
