Hi guys! How’s everyone’s weekend going so far?!
I hope those of you in the northeast are staying safe! We are experiencing a little snowfall out here, but nothing like Nemo. As much as I’m done with the snow for this year, it sure is pretty, isn’t it?
Last night we took it easy and ate a few no-bake cookies (except I used peanut butter instead of almond butter) while watching a couple episodes of Brothers & Sisters on Netflix and then hit the hay early.
This morning Cody and I both woke up around 7 AM with a glorious nine hours of sleep under our belts. Cody headed off to play some basketball with friends while I did my own little cardio and strength workout in our living room. Workout will be coming at ya this week! It’s a good one. We got cleaned up and then headed out for a little midday date. Who says you can’t go on a date in the middle of the day, right? ![]()
First stop was one of my favorite breakfast places, Mimi’s Café. We didn’t end up getting there until about 11:15 AM, so it was more of a brunch than a breakfast, but it was delicious nonetheless. I started with their seasonal cinnamon apple streusal muffin and ate about half of it before calling it quits. Those things are ginormous!
My main meal was their Avocado BLT Omelet. It’s a three egg omelet made with garlic spinach, chopped tomato, jack cheese, and topped with bacon and avocado. Definitely a great choice! There was also red skin potatoes that I topped with ketchup on the side. I dominated about two-thirds of the plate – I was hungry!
The meal was awesome but my date was even better! Love this guy to pieces.
Our next stop was Sports Authority to pick up a couple new basketballs for the basketball league that Cody is in charge of at our church. I looked around at some of the cute athletic clothes too. It makes me so excited to get back into shape post baby! Next we hit up Costco to get our groceries for the week. It was a madhouse there, even with all of the snow! That place just amazes me sometimes.
Now we are home relaxing for a few hours before we head back out to go over to our friend’s house for dinner and games this evening.
Hope you’re having a great day!
Questions:
- Where’s your favorite place to eat for breakfast? Mimi’s Café is my favorite chain restaurant for breakfast, but there’s this little place up one of the canyons called Ruth’s Diner that will always be my top favorite! They have the best biscuits ever.
- What’s the weather like where you are today? We’re just getting a little snowfall that’s supposed to last through the weekend, and then the sun is supposed to come back out on Monday! Yay!

oh man does that breakfast look good, I am always ok with eggs. Hope you have a great Saturday!
So fun! I love little random dates like that
I love Mimi’s Cafe’s huge muffins. They are sooo deeelicious!
Glad you got to have some more no-bakes…..mmmmmm
They were SO yummy!
We’re having sunny skies and 60 degree weather today. But most of our day was spent in the basement of a hospital, in our birthing class haha. Nice to see you guys have such a great date “day!”
That muffin looks delicious! Cannot go wrong with anything that has a struesel topping.
The weather today has actually been gorgeous – we were hit Thursday night/Friday morning, but today has been pure sun.
I’m in upstate NY for the snowstorm and we went dog sledding today. So much fun !!
How fun! Way to make the most of the snow!
It’s sunny here today, but super slushy! We’ve had a lot of snow and ice and now the sun and “warmer” temps are melting it a bit. Looks like a perfect weekend so far!
We had an oddly mild day here today…it was like an early Spring day! I never really eat out for breakfast, it’s not really an Irish thing but loved it when I was in the US and Canada…homemade pancakes just can’t be beat though! Have a great evening and Sunday!
Sounds like a fun day! I LOVE the muffin’s at Mimi’s. I haven’t been there in ages, though.
Tons of snow where I am today in Mass. Some places have 5 foot drifts! People will be digging out for days here. Consider yourself lucky!
Oh I’m definitely feeling lucky! Glad you guys are safe!
That omlet sounds AMAZING! I had basically the same thing but it was in a wrap
I ate it before work while watching the after effects of Nemo. So beautiful out, but so slippery!
What a fun day you had!
My favorite breakfast place is this little breakfast shack which is seemingly in the middle of nowhere. But the place is always packed, as anyone who knows about it knows that it’s THE place to go. They make their own maple syrup and the pancakes are to die for. I always get their baked beans, homemade bread, scrambled egg and pancake plate which leaves me stuffed but incredibly happy!
I live in New England, so the weather has been fierce here! But now that the calm has come after the storm, I’m enjoying the snow and can’t wait to go snowshoeing tomorrow!
Sounds yummy! The little hole in the wall places are sometimes the best!
I love going out for breakfast! Yours looks amazing – so many good flavours in there!
My favourite place to go out for breakfast is Cora’s, which is a Canadian chain that has such amazing food and also everything comes with a heaping pile of fruit on the side! I’m a big fan of their bagel and lox.
Mmmm LOVE bagel and lox!
We’re digging out from the 2.5 feet of snow Nemo left us! We kept our power on this time, unlike with Hurricane Sandy, so we are not complaining, for sure!
I love Mimi’s! My favorite place for breakfast is a little local place around the corner from my parent’s house in Phoenix
What’s it called?! Is it “The Place”? That’s in Phoenix, and I love it. The Good Egg is another one out there I love!
I actually don’t like eating out for breakfast, but I’ll gladly go for dinner! And I love midday dates. They’re so much less predictable usually than nightly dates, if that makes sense
I love Mimi’s! And I definitely miss being able to eat their muffins/breads. They’re so so good!
Looks like such a great date! There honestly aren’t many breakfast places around me that I know of. As you know we have been having good weather, highs in the 70s… But it’s supposed to get a lot colder this week!
My favorite breakfast place is Josie’s it’s a smaller local restaurant and every item I have had has been great. Blueberry, almond coconut pancakes are my favorite! Today was a gorgeous day here in Lexington!
Oh wow, haha… the difference between the snow at your house and the snow at mine is insane! We got hit by Nemo bad… three feet of snow, and no power, heat, or hot water. We had to travel to my parents’ house 30 minutes north of us (on treacherous roads) so that we wouldn’t be freezing tonight!
Oh man, I’m sorry! Glad you guys are safe though!
That kind of sounds like the perfect day so far! Especially with the snow dusted outside of your house!
I’m super jealous of the snow you got haha. How is it that I live in Canada but haven’t had ANY snow this Winter? Boo to that;)
Have a great Saturday!
Haha that is kind of ironic!
Yay for Mimi’s Cafe!! My husband and I love that place too and they have zeeee best and fattest muffins ever! haha. We don’t go often but pay a visit when his parents are in town with us.
And I usually love egg breakfasts too because they’re satisfying and well balanced for the most part. Mid day dates are awesome in my opinion because it leaves you more time to do more fun stuff
Ah, brunch dates are always so lovely. I’ve never been to Mimi’s but I’ve heard good things.
love game nights! and we always do midday dates…get use to it once the baby comes
I love day dates
. It’s starting to warm up here, but instead of getting snow, now we’re getting rain! I’d almost rather have snow!
Your day sounds wonderful and that breakfast looks delicious! I love apple strudel anything so I’d be very happy to have that muffin as a breakfast “appetizer”[?]
And a BLT omelet is a great idea, I’m gonna have to make one for myself soon… Costco is crazy every time we go, unless it’s like 10AM in the middle of the week, which rarely happens!
I’ve never been to Mimi’s Cafe… actually, I’ve never even heard of it! Do they exist on the easy coast? Maybe I’m living under a rock!
Hmm I’m not sure! They’re all over California, Arizona, and Utah, so maybe they’re more of a west coast thing?
Nemo was no fun and I still have to shovel out! But the good news is that the sun is shining today and the temps are going to go up over 30, so I’m hopeful some of the snow will melt soon.
Yay for the sun shining!
No bake cookies r so good and easy to make!!
Yum! I think you inspired me to have a no-bake cookie for dessert tonight!
I hope you got to make them!
Yum! Breakfast potatoes are seriously the best! Now you have got me craving them…
Aren’t they?! I love them too!
Your midday date sounds like so much fun! Mimi’s Cafe is one of my favorite breakfast places, too, although there aren’t any in the DC area, so I’m deprived!
Hopefully I’ll have a chance to stop by when I’m in SLC/Park City in May (by the way, will you be at Blend?!). My favorite place to get brunch in DC is at a bed and breakfast called the Tabard Inn. They have the BEST smoked salmon Eggs Benedict and cream cheese scrambled eggs!
I hope you enjoyed the rest of your weekend, Ashley! <2
Mmm wow! That smoked salmon eggs benedict combo sounds incredible! I’m hoping to be at Blend at least for part of the time… It all depends on how little Hunter is doing and if we’ll even still be living in UT at that point.
There’s a lot up in the air right now. I sure hope I can be though!
