The other day a friend randomly asked me, “What do you eat?”. I didn’t mind the question, but it kind of threw me off guard. We weren’t sitting down to eat, nor is it a question I get asked on a regular basis. I think my response was something like, “Uh, food…?”. I wasn’t really sure as to how to respond because I don’t have any restrictions on my diet or anything like that. I eat ice cream or chocolate pretty much on a daily basis, and I love me a big ol’ hamburger every once in awhile.
I started thinking about it later and wondered why I was asked that question over anyone else standing in the room. Is it because I have a “healthy living” blog? I’m not really sure. I have to wonder if other people that know I write a healthy living blog but don’t see me eat on a regular basis wonder the same thing. Do they think I just eat lettuce and carrots all day? Goodness, I hope not. Because as much as I love my lettuce and carrots, I would be lying if I said I didn’t love ice cream and chocolate more. My motto is: “It’s all about balance.” Pretty simple, but it’s what I live by (or try to).
In a nutshell, I eat everything. I try my best to nourish my body with food that will fuel and energize me well, but I won’t turn down a brownie sundae on occasion either. It’s all about balance!
So now that I’ve given you a long, drawn out answer to the question, it’s time to show you my eats from yesterday so you can see exactly what I mean from what I’m saying above.
Pumpkin oats! Can you believe it?! Something other than my usual. Shocker, I know. I stirred in some pumpkin, vanilla protein powder, and pumpkin pie spice, and then topped it with some raspberries.
Whoa, blurry much? Apparently I was still half asleep.
I actually wasn’t super fond of this bowl of oatmeal for whatever reason. Not sure if it was the protein powder addition or if I added too much pumpkin, but I just wasn’t feelin’ it so I ended up only eating about two-thirds of it.
And of course there was coffee (with half ‘n half – full fat I might add ).
Hunter and I met up with one of my good friends for a morning walk along the Jordan River. It was a beauuuutiful day and just perfect for being outdoors. On the way I snacked on this Clif bar I got from The Dirty Dash.
While I was trying to figure out what to have for lunch, I snacked on some red grapes from the fridge. Cody and I are both far more likely to eat them when I take them off the stem, wash them, and put them in a bowl, rather than keeping them in a bag in the fruit drawer.
I finally decided that my lunch was going to be leftovers from the night before – a homemade “Chipotle burrito bowl”. I topped a bed of lettuce with brown rice, black beans, plain Greek yogurt, salsa, and avocado chunks.
PB&J on toast. Nothing you haven’t seen before.
I made Courtney’s Crock Pot Stuffed Pepper Soup for dinner. I followed everything except I used half the amount of ground turkey and subbed in a can of kidney beans instead. I also omitted the sugar and used a larger can of tomato soup. Cody and I both really enjoyed it and there’s leftovers! Woot!
And of course there was dessert for this girl. Who am I kidding? A mug of cookies ‘n cream ice cream was where it was at.
This day is pretty typical for me. Oatmeal for breakfast, some sort of leftovers for lunch, a recipe I found for dinner, a couple snacks thrown in there, and a little dessert.
That’s what I eat!
Your turn! How would you answer the question? What do YOU eat?
