Welcome back to My Food N’ Fitness Diaries. Today I want to discuss the most important, and challenging, meal of the day- breakfast! Having a healthy lifestyle can be hard to balance with a busy work or family life. That’s why I have two go-to breakfast solutions for the hectic days. Instead of pulling into a drive-thru for a questionable bite to eat or, worse yet, skipping breakfast altogether, I whip out a pre-prepared and delicious choice from my freezer.
Every few weeks, I make large batches of my favorite low carbohydrate foods, portion, and package them. This ensures I have some easy options for wholesome breakfasts, no matter how overwhelming my morning may be. I have found that most healthy eating guides assume that anyone working towards a fit lifestyle has unlimited money and time. I don’t know about you, but my supply of both resources is limited.
My favorite healthy lifestyle breakfast trick is Cream Cheese Pancakes from I breathe; I’m Hungry. Sounds sinful, doesn’t it? Don’t let the name fool you; this is a low carbohydrate food option to replace heavy pancakes or waffles. I portion myself three pancakes for each serving. When I’m running late and feeling like something warm, fluffy and sweet, the mock pancakes are the perfect solution. I top them with fruit and agave syrup. If it sounds good, that’s because it is!
My second go-to breakfast option is Scrambled Egg Muffins from Six Sister’s Stuff. These handy little muffins allow me to customize the taste each week to what I’m craving. Changing up the “toppings” each time keeps my quick breakfast options from becoming monotonous.
Regardless of what fitness or healthy eating guide you’re following, you will have off days. These easy breakfast ideas make it possible to still eat wholesome low carbohydrate foods, even on your most rushed days. So, set yourself up for success and be satisfied each morning.
